Instant Pasta

About my recipes:-

I make and try to share simple recipes with basic ingredients which everyone must be having at their homes.

Pasta is an Italian dish but we Indians like to make it in our way and it is really appetizing. We mostly make three kind of pastas i.e. red sauce, white sauce and mixed sauce pasta. Today's recipe is about mix sauce pasta but an instant one without preparing traditional red or white sauce.

"Instant mix sauce pasta"

Ingredients:-

1. Pasta - 1 cup
2. Sweet Corn*
3. Onion(प्याज़)*
4. Capsicum(शिमला)*
5. Garlic(लेहसुन)*
6. Masalas:-
         1. Black salt(काला नमक)- 2tsp
         2. Black pepper(काला गोल मिर्च)- 2tsp
         3. Salt(नमक) -1tsp
         4. Chilli flakes
         5. Oregano
         6. Red chilli podwer(लाल मिर्च) -1 tsp
7. Refined Oil(तेल)
8. Tomato sauce
9. Chilli sauce
10. Soya sauce*- 1/4 tsp
11. Mayonisse
12. Schezwan sauce*
12. Malai - 1 tablespoon
13. Cheese*(optional)

Method:-

1.Take water and boil it.
2.Add pasta/macroni to it and add pinch of salt and 1tsp oil.
3.when pasta is boiled drain water and keep aside.
4. In a pan add 1 Tablespoon oil and heat it.
5. Add all veggies you want like sweet corn, capsicum ,onion, garlic and saute it and stir it for about 3 minutes in high flame.
6.Now, add all sauces like tomato sauce , chilli sauce, soya sauce, mayonisse, schewan sauce to it and mix properly.
9. Add salt, black salt, black pepper powder and little red chilli powder.
10. Now add oregano, red chilli flakes and boiled pasta.
9. Mix everything nicely.
10. Grate cheese and turn of gas.
11. Serve it hot.

Veg Hakka Noodles

Chowmin is a chinese dish and we have different variations of it in India as noodles .Veg Hakka noodles is a famous Indian variant which has more indian masalas in it and less sauc.his recipe will be easiest and may be little different from other places

Veg Hakka Noodles

Ingredients:-


(For 3-4 people)


1.Hakka noodles pack


Vegetables:-

2. Capsicum - 1 small sized
3. Onion - 2 medium sized
4. Cabbage - 1 Bowl shredded

4. Garlic* - 5-6 cloves
5. Green chillies - 3-4
6. Carrot - 1


Spices:-

7. Red tomato sauce
8. Green chilli sauce
9. Soya sauce
10. Vinegar or lemon juice - 1tsp
11. Black pepper powder - 2 teaspoon
12. Salt - 3/4 tablespoon or as per taste
13. Black salt - 1 teaspoon
14. Garam masala- 1/2 tsp
15. red chilli powder- 1tsp

16. Refined oil

Method:-

  1. Boil some water and put little salt and 1tsp oil to it.
  2. Now put noodles to it and let it boil for 3 minutes on high flame. check if its soft and then drain all water and keep noodles aside after washing them with cold water.
  3. Chop your capsicum ,carrot and onion into long and thin slices and shred your cabbage.
  4. Take a pan and put some oil into it.
  5. Put finely chopped garlic and green chilli to it.
  6. Saute them for 1/2 minutes on high flame.
  7. Now put all other veggies to it and saute at high flame for 3/4 minutes.
  8. While sauteing put all masalas like salt , black salt, black pepper, red chilli, garam masala and vinegar/lemon juice to it.
  9. Add tomato sauce(1 tablespoon), chilli sauce(1 teapoon), soya sauce(1 teaspoon) . .
  10. Now just mix everything and saute for 1 more minute at low flame and turn off gas.
  11. Serve very delicious hakka noodles .Tastes better when served with manchurian or paneer chilli.

Momos || Types of momos in India

Types of momos in India

Momo is a type of asian or more particularly indian version of dumplings. It is more famous in north eastern part of india and nepal. It is made from maida with stuffing in different ways like steam,fried etc. Read about types in later part of article

There are different types of momos and not just different type there are many other names and similar food items in other countries. But, in India we have momos and many varieties but we will talk about only the famous ones or which are mostly seen in streets of India.

1. Veg/Paneer/Chicken steam momos - The most regular and basic type of momos which are cooked in steam and is eaten with red spicey chutney or mayonisse.


2. Veg/Paneer/Chicken fried momos - The oily and crispy variety of momos which are half cooked in steam and then fried and is eaten with red spicey chutney or mayonisse.



3. Veg/Paneer/Chicken Tandoori momos - The desi indian style of momos which are cooked in steam then dipped in a besan curd batter and then it is roasted and is eaten with red spicey chutney or mayonisse.



4. Veg/Paneer/Chicken chilli gravy momos - A different type of momos less available but very delicious which are cooked in steam then put in paneer chilly's gravy and is eaten without any chutney.

Momo is tibetan food item which is a very famous indian street food and Indians like it in different forms(will write about in my next blog). But momo's tastes good in every way. 

This is different kind of recipe as this is one of my own experiment and trust me its the best momos you will have. So, basically this is steam/fried momos in panner chilly's gravy and it is tantalizing in taste.

"Momo chilli gravy"

Ingredients:-

DOUGH:

  1. Maida (all purpose flour) - 1 cup
  2. Salt - 1/2 teaspoon
  3. Water for kneading
  4. Oil for greasing
STUFFING:
  1. Oil - 3 teaspoon
  2. Garlic -4-5 cloves(finely chopped)
  3. Chilli - 2
  4. Onion - 1(finely chopped)
  5. Carrot -1(grated)
  6. Cabbage - 1 small(shredded)
  7. Black pepper powder - 1/2 teaspoon
  8. Salt - 3/4 teaspoon
  9. Paneer*-100 gm(if u want)

For Gravy:

  • Vegetables:-
    1.  Onion* - 3 medium sized
    2.  Garlic* - 5-6 cloves
    3.  Green chillies - 4-5

  • Spices:-

    1. Red tomato sauce
    2. Green chilli sauce
    3. Soya sauce
    4. Schezwan sauce*
    5. Vinegar*
    6. Black pepper powder - 2 teaspoon
    7. Salt - 3/4 tablespoon or as per taste
    8. Black salt - 1 teaspoon

  • Refined oil

Method:- 

First prepare normal steam momos,
  1. Firstly, prepare stuffing by heating oil and saute finely chopped garlic and chillies.
  2. Add finely chopped onion and saute on high flame.
  3. Now, Add grated carrot and shredded cabbage. Stir fry on high flame.
  4. Now add 1/2 tsp pepper powder and 3/4 tsp salt.
  5. Now if u want to add paneer cut into very small cubes and put to it. Stuffing mixture is ready.
  6. Now make dough for momos buy mixing maida, water , oil and salt as mentioned in ingredients.
  7. Now take small bead sized momo's dough and roll it .
  8. Roll to almost medium thin circle. around 4 – 5 inch in diameter. 
  9. Now place some stuffing in the centre.
  10. start pleating the edges slowly and gather everything just like you make battis or littis..
  11. Press in middle and seal the momos .
  12. Heat a steamer/idli maker, dhokla maker and arrange the momos in it with some water below it for steam.
  13. Steam momos for about 10 minutes.
  14. Finally, take them out and have them with mayonisse and red hot momo chutney (Check recipe here).
Now, prepare the gravy,
  1. Take a pan and put some oil into it.
  2. Take some of momo's stuffing in pan.
  3. Finely Chop your onion and garlic and put into it.
  4.  Slice your green chillies into half and put into it.
  5.  Saute them for 2 minutes on high flame.
  6. Add tomato sauce(1.5 tablespoon, chilli sauce(1/2 tablespoon), very little soya sauce(1/2 teaspoon) and schezwan chutney(1 spoon). You can change quantity of sauces as per taste but keep soya sauce very less or it will destroy taste.
  7.  Add 1 tsp vinegar or lemon juice.
  8. Add salt, black salt and black pepper powder.
  9. Now , put little water to it gravy is ready
  10. Now, put steamed momos(you can even put fried momos) into it gravy and mix properly.
  11. Your spicey and delicious momos chilli gravy is ready and you don't need and chutney with it.

Tandoori momos

"Veg/Paneer Tandoori Momos"

Ingredients:-

DOUGH:

  1. Maida (all purpose flour) - 1 cup
  2. Salt - 1/2 teaspoon
  3. Water for kneading
  4. Oil for greasing
STUFFING:
  1. Oil - 3 teaspoon
  2. Garlic -4-5 cloves(finely chopped)
  3. Chilli - 2
  4. Onion - 1(finely chopped)
  5. Carrot -1(grated)
  6. Cabbage - 1 small(shredded)
  7. Black pepper powder - 1/2 teaspoon
  8. Salt - 3/4 teaspoon
  9. Paneer*-100 gm(if u want)
Tandoori momo's batter:
  1. Curd - 1/2 cup
  2. Besan - 2 Tablespoon
  3. Red chilli powder - 1 tsp
  4. Haldi powder - 1/4 tsp
  5. Garam masala - 1/4 tsp
  6. Salt - 1/4 tsp
Method:- 

First make steam momos,
  1. Firstly, prepare stuffing by heating oil and saute finely chopped garlic and chillies.
  2. Add finely chopped onion and saute on high flame.
  3. Now, Add grated carrot and shredded cabbage. Stir fry on high flame.
  4. Now add 1/2 tsp pepper powder and 3/4 tsp salt.
  5. Now if u want to add paneer cut into very small cubes and put to it. Stuffing mixture is ready.
  6. Now make dough for momos buy mixing maida, water , oil and salt as mentioned in ingredients.
  7. Now take small bead sized momo's dough and roll it .
  8. Roll to almost medium thin circle. around 4 – 5 inch in diameter. 
  9. Now place some stuffing in the centre.
  10. start pleating the edges slowly and gather everything just like you make battis or littis..
  11. Press in middle and seal the momos .
  12. Heat a steamer/idli maker, dhokla maker and arrange the momos in it with some water below it for steam.
  13. Steam momos for about 10 minutes.
Now, for tandoori momos,
  1. Mix above mentioned tandoori momo's batter ingredients and make smooth batter.
  2. coat all steamed momos in the batter.
  3. Now, you have to bake them in either preheated microwave oven in convection mode at 220 degree for 10 minutes or in a gas oven or in direct flame.
  4. Its good to eat with red hot spciey chutney or mayonisse.

Fried momos

  7. Now take small bead sized momo's dough and roll it .

  9. Now place some stuffing in the centre.
  10. start pleating the edges slowly and gather everything just like you make battis or littis..
  11. Press in middle and seal the momos .
  12. Heat a steamer/idli maker, dhokla maker and arrange the momos in it with some water below it for steam.
  13. Steam momos for about 4-5 minutes(no need to steam completely as we are gonna fry it).
  14. Now heat half cup oil in pan and put all half /power steam momos to it and fry for 3/4 minutes till gets brown.
  15. Finally, take them out and have them with mayonisse and red hot momo chutney (Check recipe here).

"Momo's red chutney"

Ingredients:-

1. Tomato - 2 medium sized
2. Dry red chillies - 5-6
3. Garlic - 4-5 cloves
4. Onion - 1 medium sized
5. Refined oil - 1.5 tablespoon

Masalas:

6. Salt - as per taste or 3/4 tablespoon
7. Black pepper powder- 1 teaspoon
8. Sugar - 1/2 teaspoon 
9. vinegar or lemon juice - 1/2 teaspoon

Method:- 

  1. Boil some water and add red chillies and tomatos (after slicing into two parts)to it. Boil for 3 minutes.
  2. Now drain all the water and peel off tomatoes.
  3. Put them in a mixer grinder and make a smooth paste.
  4. Take a pan and refined oil to it. Now add finely chopped garlic and onions to it.
  5. Add the tomato and chilli paste to it.
  6. Cook it on medium flame.
  7. Add salt, black pepper powder, sugar and vinegar/lemon juice to it.
  8. After 3-4 minutes turn off gas and ,
  9. Your red hot spicey momo's chutney is ready . Serve them with momos.

Red sauce pasta

"Red sauce pasta"Or "Arabiata pasta"

Ingredients:-

1. Pasta - 1 cup

7. Masalas:-
         1. Black salt(काला नमक)- 2tsp

         6. Red chilli podwer(लाल मिर्च) -1 tsp
8. Refined Oil(तेल)
9. Tomato sauce

9. Add salt, black salt, black pepper powder and little red chilli powder.
10. Now add the veggies you kept aside along with oregano, red chilli flakes and boiled pasta.
9. Mix everything nicely.
10. Grate cheese and turn of gas.
11. Serve it hot.

White sauce pasta

Pasta is an Italian dish but we Indians like to make it in our way and it is really appetizing. We mostly make three kind of pastas i.e. red sauce, white sauce and mixed sauce pasta. Today's recipe is about white sauce pasta.
"White sauce pasta"Or "Alfredo pasta"

Ingredients:-

1. Pasta - 1 cups
2. Milk(दुध) -1 glass
3. Sweet Corn*
4. Onion(प्याज़)*
5. Capsicum(शिमला)*
6. Garlic(लेहसुन)*
7. Masalas:-
         1. Black salt(काला नमक)- 2tsp
         2. Black pepper(काला गोल मिर्च)- 2tsp
         3. Salt(नमक) -1tsp
         4. Chilli flakes
         5. Oregano
         6. Red chilli podwer(लाल मिर्च) -1 tsp
8. Refined Oil(तेल)
9. Mayonisse*(optional)
10. Cheese*(optional)
11. All purpose flour (Maida) -1 tablespoon
12. Butter -1 table spoon

Method:-

1.Take water and boil it.
2.Add pasta/macroni to it and add pinch of salt and 1tsp oil.
3.when pasta is boiled drain water and keep aside.
4. In a pan add 1 Tablespoon oil and heat it.
5. Add all veggies you want like sweet corn, capsicum, onion, garlic and saute it and stir it for about 3 minutes in high flame. Keep it aside
6. Now take pan and add butter and maida. Saute for 1 minute on high flame.
7. Add milk slowly and mix it properly in order to avoid lumps.
7. Add salt, black salt, black pepper powder and little red chilli powder.
8. When you think milk is thick enough add pasta, mayonisse, oregano and chilli flakes.
9. Mix everything nicely.
10. Grate cheese and turn of gas.
11. Serve it hot.

Note:- You can make it even tastier by adding maggi magic masala 1/2 packet.

Paneer chilli

Paneer Chilli(dry and gravy)

Ingredients:-


(For 3-4 people)



1. Paneer - 200gm



Vegetables:-

2. Capsicum - 1 small sized
3. Onion* - 3 medium sized
4. Garlic* - 5-6 cloves
5. Green chillies - 4-5

Spices:-

6. Red tomato sauce
7. Green chilli sauce
8. Soya sauce
9. Schezwan sauce*
9. Vinegar*
10. Black pepper powder - 2 teaspoon
11. Salt - 3/4 tablespoon or as per taste
12. Black salt - 1 teaspoon

13. Refined oil

Method:-

1. Cut your paneer into cubes and shallow fry them and keep aside.
2. Similarly chop your capsicum and 2 onion into big pieces and fry them and keep aside.
3. Take a pan and put some oil into it.
4. Finely Chop your onion and garlic and put into it.
5. Slice your green chillies into half and put into it.
6. Saute them for 2 minutes on high flame.
7. Add tomato sauce(1.5 tablespoon, chilli sauce(1/2 tablespoon), very little soya sauce(1/2 teaspoon) and schezwan chutney(1 spoon). You can change quantity of sauces as per taste but keep soya sauce very less or it will destroy taste.
8. Add 1 tsp vinegar.It can be skipped but try not to.
9. Add salt, black salt and black pepper powder.
10. Now if u want to keep it dry then add paneer, capsicum and onions to it that you kept aside.
11. If u want gravy then add little water and its ready.
12. Serve very delicious paneer chilli.

Pav Bhaji

Pav Bhaji is a street food from Mumbai, India and it is everyone's favourite. It is very very tasty and easy to make .Only thing is it needs a lot of vegetables but making it is easy.

Pav Bhaji

Ingredients:-


(For 5-6 People)



1. Pav(or, bread)- 2 packets

Vegetables:-

2. Potato-10 medium sized
3. Capsicum- 1 big
4. Carrot - 2
5. Cabbage* - 1 small sized
6. Cauliflower* - 1 small
7. beetroot* - 1
8. Onion -5 medium sized
9. Tomato - 4 medium sized
10. Peas*
11. Coriander

Spices:-

12. Kashmiri red chilli powder - 2 Tablespoon
13. Salt - As per taste (1.5 Table spoon)
14. Pav Bhaji Masala - 3 Table spoon
15. Haldi - 1 teaspoon

16. Butter - 50gm approx
17. lemon juice - 1teaspoon

Method:-

1. Chop potato, carrot, tomato , beetroot, cauliflower, cabbage in small pieces and put it in a cooker and 1 glass water(500 ml) and boil it for 3-4 whistles or 20 minutes at medium flame.
2. Take a pan and add butter to it. Add finely chopped capsicum and onion to it. Saute for 2 minutes on high flame. Add pav bhaji masala, red chilli powder, salt and 1/2 tsp sugar.
3. Mix nicely and add little chopped coriander and water.
4. Put all your boiled veggies in it.
5. If water is more then let it boil and then mash it with potato masher or anything .
6. Add lemon juice.
7. Turn off gas .
8. Sprinkle little more coriander and little butter at top.

9. Take a pan add little butter and put pav on it. Toast the pav on both sides.
10. Your Pav Bhaji is ready to serve.

Yeah,you heard it right it would take two minutes two make cake or rather i would say coffee mug cake for 1 person.

Instant Mug Cake

Ingredients:-

1. Maida(all purpose flour)- 3 Tablespoon
2. Sugar(Powdered)- 3 Tablespoon
3. Butter- 2 tablespoon
4. vanilla essence - 1/8 teaspoon
5. Baking powder - 1/8 teaspoon
6. Baking soda - 1 pinch
7. Milk - 4 tablespoon
8. Malai or cream - 1 tablespoon
9. Coco powder - 1 tablespoon (if u want chocolate flavor)

I used microwave oven for this recipe but you can try this in gas oven or closed pan.

9. Microwave safe coffee mug only.

Method:-

1. Take the mug.
2. Put maida, sugar baking powder, baking soda , vanilla essence and butter in it in mentioned order.
3. Add choco powder if u want chocolate cake. 3. Add malai to it.
4. Add little milk and mix everything thoroughly using a fork.
5. If required add little more milk to make batter of good consistency.
6. You may put some cake decorative items like chocolate rice or so.
7. Keep it in microwave oven in microwave mode for 1:30 minutes.
8. Take it out and enjoy the delicacy.


Note:- If u don't have microwave try this by keeping batter in a small container in gas oven or closed lid pan in medium flame for 4-5 minutes and let me know in comments if it works(i am certain of it working).

So, i am sharing an instant recipe of condensed milk that is good enough for things you make at home and can be prepared in just a minute.

Instant Condensed milk

Ingredients:-

  1. Milk powder -2(10 rs. packet)
  2. Sugar - 1 cup
  3. Butter -25 mg
  4. Warm water- 1/2 cup
Method:-

1. Take all ingredients in a mixture and mix it.
2. Your condensed milk is ready .
3. I have used it for making cake and ice cream and it gave good results.

Bread Halwa

Many a times we are left with breads or just side of breads .so, why not make full use of it. So, i experimented something and came up with bread ka halwa from sides of bread.

Bread ka Halwa

Ingredients:-

  1. Bread sides or Bread(whatever you want) and crumb it in mixer-2 cups
  2. Milk-1 cups
  3. Ghee-2 table spoon
  4. Sugar or powered sugar(better)- 2 tablespoon
  5. elaichi powder(cardamon powder)-1 tsp
  6. badam - 5-6 finely chopped
Note:-Measurements may change according to taste because this is sweet dish .
Method:-

1. Take bread sides or breads in mixer and make crumbs of it.
2. Take a pan and heat it.
3. Put Ghee in it.
4. Put bread crumbs to it and roast nicely.
5. Add milk enough so that it gets consistency of halwa.
6. Now add sugar.
7. Mix nicely and turn of gas.
8. Now put elaichi powder and chopped badam.
9. Mix again and serve hot.

Paneer Butter Masala

Paneer Butter Masala is most ordered recipes of all time. Yes, we have a lot of paneer recipes but whenever we Indians go to a new restaurant we certainly order paneer butter masala because it is most simple and we know it would be a good choice always. It has sweet taste and creamy gravy of cream and tomato.It tastesgood with any indian bread like naan, kulcha, roti or even rice.
So, lets try to make same paneer butter masala at our home.

Paneer Butter Masala

Ingredients:-
(For 4-5 people)

1. Paneer cubes-200gm
2. Tomato - 4-5 medium sized
3. Cream or malai - 2-3 Tablespoon
4. Onion(प्याज़)-2 large sized
5. Capsicum(शिमला)*-1 medium sized
7. Cashew nuts(काजू)- 7-8 pc
6. Masalas:-
         1. garam masala -1tsp or sabji masala - 3 tsp
         2. Black pepper(काला गोल मिर्च)- 4tsp
         3. Salt(नमक) -as per taste
         4. Cumin seeds(जीरा)-1 tsp
         5. Turmeric(हल्दी)- 2 tsp
         6. Kashmiri Red chilli podwer(लाल मिर्च) - 2 tsp
         7. Ginger Garlic paste*(optional)-1 tablespoon
8. Butter(highly recommended) or Refined Oil(तेल)

Method:-

  1. Heat some butter or oil in a pan and then add cumin seeds to it.
  2. Add ginger garlic paste and sliced onions to it.
  3. Add sliced tomatos to it.
  4. Add cashew nuts to this.
  5. Add haldi powder to it.
  6. Add little salt so that they cook well.
  7. After 3 minutes of sauteing on high flame turn off the flame.
  8. Let it cool for 5 minutes.
  9. After 5 minutes put above mixture in a mixer and grind it .Your gravy is ready
  10. Now , take a pan and add little oil or butter to it and put all the gravy to it.
  11. Add salt, garam masala, red chilli powder and black pepper powder.
  12. Cook it for 4-5 minutes on medium flame till oil comes up(sometimes it may not so cook for just 5 minutes).
  13. Add malai or cream to it and mix nicely.
  14. Meanwhile shallow fry capsicum and paneer .
  15. Now add half a glass water to gravy and add fried capsicum to it.
  16. Turn off gas and add paneer to it.
  17. Now put it in a bowl and you can put little butter or malai and little coriander above it to make it look amazing.
  18. Serve it hot with Naan, Kulcha, Roti or rice .
  19. It would be lip smacking delicious.

White sauce maggi || Alfredo maggi

Maggi is everyone's favourite and easy to make snack, breakfast and sometimes dinner.
Lets make it even more delicious, more Tempting and for that we shall try some different recipes of maggi.

Here's first one -

"White sauce maggi"Or "Alfredo maggi"

Ingredients:-

1. Maggi( ₹12 packet)
2. Milk(दुध) -1 glass
3. Sweet Corn*
4. Onion(प्याज़)*
5. Capsicum(शिमला)*
6. Garlic(लेहसुन)*
7. Masalas:-
         1. Black salt(काला नमक)- 2tsp
         2. Black pepper(काला गोल मिर्च)- 2tsp
         3. Salt(नमक) -1tsp
         4. Chilli flakes
         5. Oregano
         6. Red chilli podwer(लाल मिर्च) -1/2 tsp
8. Refined Oil(तेल)
9. Mayonisse*(optional)
10. Cheese*(optional)

Method:-

1.Take water and boil it.
2.Add maggi to it and add pinch of salt and 1tsp oil.
3.when maggi is boiled drain water and keep aside.
4. In a pan add 1Table spoon oil and heat it.
5. Add all vegies you want like sweet corn, capsicum, onion, garlic and saute it and stir it for about 3 minutes in high flame.
6. Add milk to it in high flame and let it boil.
7. Add salt, black salt, black pepper powder       and little red chilli powder.
8. When you think milk is thick enough add  maggi, maggi masala , mayonisse, oregano and chilli flakes.
9. Mix everything nicely.
10. Grate cheese and turn of gas.
11. Serve it hot.
