Momos || Types of momos in India

Types of momos in India

Momo is a type of asian or more particularly indian version of dumplings. It is more famous in north eastern part of india and nepal. It is made from maida with stuffing in different ways like steam,fried etc. Read about types in later part of article

There are different types of momos and not just different type there are many other names and similar food items in other countries. But, in India we have momos and many varieties but we will talk about only the famous ones or which are mostly seen in streets of India.

1. Veg/Paneer/Chicken steam momos - The most regular and basic type of momos which are cooked in steam and is eaten with red spicey chutney or mayonisse.


2. Veg/Paneer/Chicken fried momos - The oily and crispy variety of momos which are half cooked in steam and then fried and is eaten with red spicey chutney or mayonisse.



3. Veg/Paneer/Chicken Tandoori momos - The desi indian style of momos which are cooked in steam then dipped in a besan curd batter and then it is roasted and is eaten with red spicey chutney or mayonisse.



4. Veg/Paneer/Chicken chilli gravy momos - A different type of momos less available but very delicious which are cooked in steam then put in paneer chilly's gravy and is eaten without any chutney.

There are few other less common types like:

  • Jhol momos: Basically momos in soup(Nepali style)
  • Open momo: momos open from one side
  • Chocolate momos: chocolate stuffing

Momo is tibetan food item which is a very famous indian street food and Indians like it in different forms(will write about in my next blog). But momo's tastes good in every way. 

This is different kind of recipe as this is one of my own experiment and trust me its the best momos you will have. So, basically this is steam/fried momos in panner chilly's gravy and it is tantalizing in taste.

"Momo chilli gravy"

Ingredients:-

DOUGH:

  1. Maida (all purpose flour) - 1 cup
  2. Salt - 1/2 teaspoon
  3. Water for kneading
  4. Oil for greasing
STUFFING:
  1. Oil - 3 teaspoon
  2. Garlic -4-5 cloves(finely chopped)
  3. Chilli - 2
  4. Onion - 1(finely chopped)
  5. Carrot -1(grated)
  6. Cabbage - 1 small(shredded)
  7. Black pepper powder - 1/2 teaspoon
  8. Salt - 3/4 teaspoon
  9. Paneer*-100 gm(if u want)

For Gravy:

  • Vegetables:-
    1.  Onion* - 3 medium sized
    2.  Garlic* - 5-6 cloves
    3.  Green chillies - 4-5

  • Spices:-

    1. Red tomato sauce
    2. Green chilli sauce
    3. Soya sauce
    4. Schezwan sauce*
    5. Vinegar*
    6. Black pepper powder - 2 teaspoon
    7. Salt - 3/4 tablespoon or as per taste
    8. Black salt - 1 teaspoon

  • Refined oil

Method:- 

First prepare normal steam momos,
  1. Firstly, prepare stuffing by heating oil and saute finely chopped garlic and chillies.
  2. Add finely chopped onion and saute on high flame.
  3. Now, Add grated carrot and shredded cabbage. Stir fry on high flame.
  4. Now add 1/2 tsp pepper powder and 3/4 tsp salt.
  5. Now if u want to add paneer cut into very small cubes and put to it. Stuffing mixture is ready.
  6. Now make dough for momos buy mixing maida, water , oil and salt as mentioned in ingredients.
  7. Now take small bead sized momo's dough and roll it .
  8. Roll to almost medium thin circle. around 4 – 5 inch in diameter. 
  9. Now place some stuffing in the centre.
  10. start pleating the edges slowly and gather everything just like you make battis or littis..
  11. Press in middle and seal the momos .
  12. Heat a steamer/idli maker, dhokla maker and arrange the momos in it with some water below it for steam.
  13. Steam momos for about 10 minutes.
  14. Finally, take them out and have them with mayonisse and red hot momo chutney (Check recipe here).
Now, prepare the gravy,
  1. Take a pan and put some oil into it.
  2. Take some of momo's stuffing in pan.
  3. Finely Chop your onion and garlic and put into it.
  4.  Slice your green chillies into half and put into it.
  5.  Saute them for 2 minutes on high flame.
  6. Add tomato sauce(1.5 tablespoon, chilli sauce(1/2 tablespoon), very little soya sauce(1/2 teaspoon) and schezwan chutney(1 spoon). You can change quantity of sauces as per taste but keep soya sauce very less or it will destroy taste.
  7.  Add 1 tsp vinegar or lemon juice.
  8. Add salt, black salt and black pepper powder.
  9. Now , put little water to it gravy is ready
  10. Now, put steamed momos(you can even put fried momos) into it gravy and mix properly.
  11. Your spicey and delicious momos chilli gravy is ready and you don't need and chutney with it.

Tandoori momos

"Veg/Paneer Tandoori Momos"

Ingredients:-

DOUGH:

  1. Maida (all purpose flour) - 1 cup
  2. Salt - 1/2 teaspoon
  3. Water for kneading
  4. Oil for greasing
STUFFING:
  1. Oil - 3 teaspoon
  2. Garlic -4-5 cloves(finely chopped)
  3. Chilli - 2
  4. Onion - 1(finely chopped)
  5. Carrot -1(grated)
  6. Cabbage - 1 small(shredded)
  7. Black pepper powder - 1/2 teaspoon
  8. Salt - 3/4 teaspoon
  9. Paneer*-100 gm(if u want)
Tandoori momo's batter:
  1. Curd - 1/2 cup
  2. Besan - 2 Tablespoon
  3. Red chilli powder - 1 tsp
  4. Haldi powder - 1/4 tsp
  5. Garam masala - 1/4 tsp
  6. Salt - 1/4 tsp
Method:- 

First make steam momos,
  1. Firstly, prepare stuffing by heating oil and saute finely chopped garlic and chillies.
  2. Add finely chopped onion and saute on high flame.
  3. Now, Add grated carrot and shredded cabbage. Stir fry on high flame.
  4. Now add 1/2 tsp pepper powder and 3/4 tsp salt.
  5. Now if u want to add paneer cut into very small cubes and put to it. Stuffing mixture is ready.
  6. Now make dough for momos buy mixing maida, water , oil and salt as mentioned in ingredients.
  7. Now take small bead sized momo's dough and roll it .
  8. Roll to almost medium thin circle. around 4 – 5 inch in diameter. 
  9. Now place some stuffing in the centre.
  10. start pleating the edges slowly and gather everything just like you make battis or littis..
  11. Press in middle and seal the momos .
  12. Heat a steamer/idli maker, dhokla maker and arrange the momos in it with some water below it for steam.
  13. Steam momos for about 10 minutes.
Now, for tandoori momos,
  1. Mix above mentioned tandoori momo's batter ingredients and make smooth batter.
  2. coat all steamed momos in the batter.
  3. Now, you have to bake them in either preheated microwave oven in convection mode at 220 degree for 10 minutes or in a gas oven or in direct flame.
  4. Its good to eat with red hot spciey chutney or mayonisse.

Fried momos

  9. Now place some stuffing in the centre.
  10. start pleating the edges slowly and gather everything just like you make battis or littis..
  11. Press in middle and seal the momos .
  12. Heat a steamer/idli maker, dhokla maker and arrange the momos in it with some water below it for steam.
  13. Steam momos for about 4-5 minutes(no need to steam completely as we are gonna fry it).
  14. Now heat half cup oil in pan and put all half /power steam momos to it and fry for 3/4 minutes till gets brown.
  15. Finally, take them out and have them with mayonisse and red hot momo chutney (Check recipe here).

Momo chutney

"Momo's red chutney"

Ingredients:-

1. Tomato - 2 medium sized
2. Dry red chillies - 5-6
3. Garlic - 4-5 cloves
4. Onion - 1 medium sized
5. Refined oil - 1.5 tablespoon

Masalas:

6. Salt - as per taste or 3/4 tablespoon
7. Black pepper powder- 1 teaspoon
8. Sugar - 1/2 teaspoon 
9. vinegar or lemon juice - 1/2 teaspoon

Method:- 

  1. Boil some water and add red chillies and tomatos (after slicing into two parts)to it. Boil for 3 minutes.
  2. Now drain all the water and peel off tomatoes.
  3. Put them in a mixer grinder and make a smooth paste.
  4. Take a pan and refined oil to it. Now add finely chopped garlic and onions to it.
  5. Add the tomato and chilli paste to it.
  6. Cook it on medium flame.
  7. Add salt, black pepper powder, sugar and vinegar/lemon juice to it.
  8. After 3-4 minutes turn off gas and ,
  9. Your red hot spicey momo's chutney is ready . Serve them with momos.
